Croissant Breakfast Sandwich
Description
This refined breakfast, designed to break the monotony of regular toast, pairs buttery, flaky croissants with savoury layers of chicken ham, scrambled egg/omelette, and natural Havarti cheese, balanced with fresh tomato and baby spinach. This one-pan meal makes it an ideal choice for a busy morning or a fancy weekend brunch.

Beat the eggs with the seasoning of choice (I use mushroom seasoning granules and red chili pepper flakes).

Heat oil in a large frying pan and fry the chicken ham slices in this for a bit till lightly colored on both sides. Remove from the oil and set aside.

In the same (fragrant) oil, add the beaten omelet mixture. Swirl the pan. Allow the egg to set a bit, and then add the spinach leaves over the top. When the egg has set on the bottom, gently fold the egg in half, covering the leaves. Flip over the folded omelet once or twice to make sure the inside is cooked, without making the omelet too dark in color. Set aside along with the ham.

Slice the butter croissants through the middle without cutting them all the way, and open them up.

Heat a little butter in the pan (per croissant) and toast the insides of each croissant lightly.

Now to assemble: Place the natural Havarti cheese slice over the inside of the croissant while still warm from toasting. Top this with the chicken ham. Slice the omelet into three portions at an angle. Place one portion per croissant and finish with a slice of tomato. Close the open croissant and serve it warm.
