Mandazi – African Doughnuts

East African Fried Breads with a Delicate Coconut Flavour

Mandazi are a much-loved East African treat, enjoyed across Kenya, Tanzania, Uganda and neighbouring regions. Often served for breakfast or as an afternoon snack, these lightly sweetened fried breads are a familiar sight in homes, bakeries and street-side food stalls. Traditionally enjoyed with a cup of spiced tea or coffee, mandazi are wonderfully versatile, equally welcome at the breakfast table or as a simple homemade treat to share with family and friends.

Unlike regular doughnuts, mandazi are usually less sweet and are often made without yeast, using baking powder for a quicker preparation. They are commonly shaped into triangles, squares or other simple forms before being fried until beautifully golden. Depending on the recipe, they can be soft and cake-like inside, with a delicate outer crust and a gentle sweetness that makes them particularly satisfying alongside a warm drink.

Coconut is a popular flavour in many coastal East African variations, especially in Swahili-influenced cooking, where coconut milk is a familiar ingredient. In this version, Kara Coconut Cream adds richness, moisture and a subtle coconut aroma to the dough. Combined with a little butter, egg and warming spices such as cardamom and cinnamon, it produces mandazi with a tender interior and a lightly crisp, golden exterior.

This baking-powder version is especially convenient for home cooks because it requires no yeast or lengthy proving. A short resting period allows the flour to absorb the moisture and the dough to relax, making it easier to roll and shape. The key is to keep the dough soft and pliable, knead it only until smooth, and fry the pieces over steady medium heat so that they cook through without becoming too dark on the outside.

These coconut mandazi are best enjoyed freshly fried, when their delicate crust contrasts beautifully with the soft centre. They are delicious served warm or at room temperature, with chai, coffee or your favourite hot beverage. Simple to prepare and filled with the comforting fragrance of coconut and spice, they bring a little taste of East African food culture into the home kitchen.
