Japanese Curry (Karē Raisu)
Description
Japanese Curry (Kare Raisu) is a hearty, comfort food often described as a "national dish of Japan." There is a unique history of the dish—brought to Japan by the British Navy—resulting in a curry that is thick, viscous, and distinctly sweeter and milder than its Indian counterpart.
Ingredients:
Instructions

Heat oil in a wide nonstick wok/pan.

Add garlic and onion and allow to sweat. 1 minute.

Add the chicken and toss on high heat. 1 minute.

Add potato and optional carrot and stir fry till chicken turns white. 2 minutes.

Add 1 1/2 cups of water and bring to a boil. Reduce heat, cover, and simmer until ingredients are tender, approx. 8 minutes.

Add curry cubes (60 gms) and stir vigorously till thoroughly melted into the curry sauce and incorporated.

Add more water as needed to loosen the thickened curry. (Curry Cubes will promote thickened sauce)

You can add another curry cube or additional spice powders like coriander powder, paprika. chilli powder and salt as needed. MSG is also added occasionally. 1/4 tsp.

Simmer briefly and remove from heat.

- Serve hot with Japanese Rice / Steamed White Rice.
