The Club Sandwich is a sandwich with cooked chicken breast and usually bacon, along with juicy ripe tomatoes and crisp lettuce layered between two or three slices of toasted bread with mayonnaise.

The name came to be due to its popularity at prestigious clubs in the late 1800’s.  It definitely existed in the United States by the late 19th century.  In fact, the Club Sandwich is said to have been the favorite of former King Edward VIII of England and his wife, Wallis Simpson.  In fact, she took great pride in preparing this sandwich.

A popular theory is that this sandwich appeared in 1894, at the famous Saratoga Club-House (an exclusive club for men) where the ‘potato chips’ was born.

The club sandwich may be anywhere from one to five stories high.  The foundation is always toast, but the rest depends on the maker’s fancy–and the materials at hand.  The sandwich etiquette is that it should be eaten with a  knife and fork.

Here, in my version, we make a club sandwich or chicken slice or Luncheon meat, with cheese, mayo, tomato, and lettuce. An easy craving buster. For the vegetarian option, skip the meat and replace with thinly sliced cucumber, sprinkled with salt and pepper.
