How to make Chicken and Mushroom Pie ( with Coconut Cream) – Recipe at a glance:

  • Gather ingredients.
  • Prepare pie pastry and keep refrigerated.
  • Lightly pan-fry chicken breasts, that have been butterflied and dredged in seasoned flour.
  • Prepare the filling.
  • Preheat the oven and roll out the pastry.
  • Cover the Pie dish, containing the filling with the rolled-out pastry.
  • Bake till golden.

Ingredients:

  • 600 gms Chicken breasts (boneless, skinless)
  • 200-250 gms Swiss brown Mushrooms
  • 2 medium-large-sized Potatoes
  • 2 medium-sized Carrots
  • 1 Yellow Onion
  • 2 Sprigs of fresh Thyme
  • 2 Tbsp fresh English Parsley
  • 200 ml Kara Coconut Cream
  • 2 Tbsp Olive oil
  • 1/2-3/4 tsp Salt
  • 1/4-1/2 tsp Black Pepper
  • 1/4 tsp ground Allspice

For Coating and pan-frying Chicken:

  • 1/2 cup Plain flour
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 1/4 tsp dried Thyme
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 2-3 Tbsp Olive Oil

For the Pie Crust:

  • 2 1/2 cups Plain flour
  • 1/2 tsp Salt
  • 1/2 tsp Baking powder
  • 85 gms cold-unsalted Butter, cut into cubes
  • 65 ml Kara Coconut cream, chilled
  • 4-7 Tbsp ice-cold Water
