Spoon Magnet Chicken Roast
Description
This dish is a Kerala-style Chicken Roast, a fiery and flavorful chicken curry from the state of Kerala in southern India. Unlike a dry roast, this version features a thick, clingy, and aromatic gravy that generously coats each piece of chicken. This is the easiest method to achieve this result. The red onions and tomatoes create a rich, savory base, while the Kashmiri and hot chili powders give the dish its vibrant red color and a spicy kick. The use of coconut oil adds a distinctive, slightly sweet and nutty aroma that is characteristic of Kerala cuisine. Fresh curry leaves and garam masala are stirred in at the very end, infusing the dish with their unique, complex fragrance. The result is a bold, spicy, and deeply satisfying chicken dish that is best enjoyed with rice, appam, or parotta.
Ingredients:

Add 3 cups of water to a wide non-stick pan. (1 cup = 240 ml)

Bring to a boil.

Add the sliced onions to the boiling water and cook 2-3 minutes.

Add the chilli and turmeric powders. Boil briefly again.

Add the cleaned, drained chicken. Add salt to taste. Stir.

Cover tightly and cook on HIGH for ten minutes. Open and stir once or twice in between.

After 10 minutes, add the sliced tomato, chopped coriander. Also, add the coconut oil now. Stir again.

Cook on low heat( uncovered) for another 25 minutes. Stir Occasionally. Towards the last 5 minutes, stir more frequently. And at the end, stir continuously till the gravy is thick and clingy in texture and coats the chicken.

Lastly, add the fresh curry leaves and garam masala. Stir through. Remove from heat and keep covered till served.
