These Japanese style Chicken skewers are very easy to make and a refreshing change. Serve with salads or rice.

Yakitori is a general term for all types of grilled chicken skewers in Japan. This can include different parts of the chicken, such as the thigh (momo), breast (sasami), skin (kawa), liver (reba), or, as in this case, a minced meatball.

Description

Chicken Tsukune, a traditional Japanese grilled chicken meatball skewer, is one of my favourite Yakitori dishes.

Tender meatballs from a mixture of ground chicken (specifically, skinless, boneless thigh or leg), eggs, panko breadcrumbs, and a touch of salt, flour, and cornflour. A unique element is the use of fresh ginger juice to flavor the meatballs.

Instructions

  1. Combine all ingredients for meatballs in food processor except ginger and mince.
  2. Squeeze only the juice of the ginger into this mince and mix.
  3. Wet hands and form into small lime sized balls.
  4. Bring water in a wide saucepan to simmer. Add all the balls, spaced evenly. Leave undisturbed.
  5. Cover and simmer for 4 – 7 minutes just till the chicken turns white and floats.
  6. Drain.
  7. Prepare the sauce: Add all the ingredients for the sauce (except cornflour solution) in a small sauce pan.
  8. Bring to boil Then simmer covered for 5 minutes till reduced.
  9. Now add the cornflour solution and thicken. Take off heat.
  10. Secure the balls onto soaked wooden Skewers a half inch apart from eachother.
  11. Brush with the prepared sauce till uniformly covered. We should have enough sauce leftover for basting and dipping later remaining.
  12. Preheat oven.
  13. You may Grill, Broil or Barbecue , basting frequently about 8 minutes.If Broiling in a conventional oven, preheat the oven to medium high and broil.
  14. Serve Hot!

Note

  • You may sprinkle some black pepper or for more authenticity Shichimi tōgarashi (Japanese: 七味唐辛子, “seven flavor chili pepper“), to the grilled meatballs before serving!
  • You can substitute the alcoholic ingredients, with a combination of grape juice, rice vinegar, ginger juice and lime juice.
  • Instead of mincing the meat, the chicken can be cut into small bitesize pieces instead and rolled in remaining meatball ingredients.
