Unakka Chemmeen Fry (Dried Shrimp Fry)

Description

The magic of unakka chemmeen fry lies in the perfect balance of salty, smoky, sweet, and spicy flavors. The saltiness and smokiness of the dried shrimp are balanced by the sweetness of the caramelized shallots, the heat of the chilies, and the fragrance of the coconut oil and curry leaves. It's a simple dish, but every ingredient plays a vital role in creating a complex and satisfying taste.

Ingredients:

  1. Clean the shrimp carefully if not already cleaned.
  2. Deep fry in hot oil on medium heat till crisp – do not allow to brown! Make sure they are crisp! Note that they tend to get a little more crisp upon resting.
  3. Note that dried shrimp is salted, so don’t add any more salt. Or check before seasoning.
  4. Drain and set aside to cool. Retain the oil used for frying
  5. Meanwhile grind (pulse) the dry chilies with shallots and ¼ tsp of salt (a couple of times ) to a course gritty texture - not a fine paste.
  6. Remove some of the oil used for frying (leaving just enough to saute the ground chilli mixture)
  7. Heat the reserved oil and saute the chilli mixture well till aromatic.
  8. Add curry leaves and stir-fry till chillies are well fried without burning.
  9. Return the fried dry shrimp to the sauteed chilly paste and stir well till evenly heated.
  10. (You may not need to use the entire amount of fried chilly paste,depending on how spicy you like it)
  11. The leftover ground fried chilli can be used as a condiment to top various dishes.
