Tabil is a versatile spice! ‘Tabil’ translates to coriander in Tunisian Arabic and is predominantly scented with coriander, hot chilli, and garlic flavor. This Tunisian blend is used in a lot of North African cooking. Often in Tagines and stews. It can also be used as a BBQ rub. Sprinkle in wraps or over soups and dips. It provides a subtle, earthy, and warm touch to any dish.

Tabil (Tunisian Spice Mix) – تابل
Description
Tabil is a flavorful and aromatic spice mix originating from Tunisia, where it is a staple in the cuisine. The name "tabil" itself actually means "seasoning" or once referred to "coriander" in Tunisian Arabic, which highlights the importance of that spice in the blend.

Add allspice except cloves, cardamom, and garlic powders to a heavy based pan/ skillet.

Heat and stir continuously till aromatic. about 2 minutes.

Remove from heat. Add the remaining three spices while still hot.

Add to the spice grinder and process into a powder. Slight grains are fine.

Store this fantastic aromatic spice in small airtight jars.
Note
- You can add up to 1/2 Tbsp of garlic powder or dried garlic flakes to this recipe. I use less since I add fresh garlic to most of the recipes that use 'Tabil' . Bay leaves and Dried rose petals are also sometimes used.
- Tabil is pronounced like Table with an accent on the t and 'il.
