There are many different types of Spinach used in Asian stir-fry dishes.. Phuay Leng is easily distinguishable from other varieties of spinach, such as Round Spinach, Sharp Spinach, Spinach, Bok Choy, etc… as Phuay Leng is the only one with only one leaf per stalk. Phuay Leng is a good substitute for Palak(Indian Spinach) in recipes.

Stir-Fried Chinese Greens – Chinese Spinach/Phuay Leng/菠菜

Wash the greens 'extra thoroughly' and trim off any tough roots. Discard any discolored leaves. Chop up roughly and set aside.

Slice the chilli and ginger.

Heat oil in a wide wok till smoking. Swirl to coat the surface of the wok.

Add the ginger slices and stir till nice and fragrant. Add the red chilies.

Add the chopped Phuay Leng and stir for one minute.

Add the salt and sugar and continue stir-frying for just another minute.

Add the soy sauce last and stir through once again.

Serve hot with rice. Lovely, colorful side dish!
Note
- You can use any Asian greens to cook similarly.
- You can use fish sauce instead of soy sauce.
