Mushroom Masala

Description

This Mushroom Masala (South Indian) is a Tiffin-style dish. It is a savory, thick gravy preparation that mimics the rich, spiced gravies found in South Indian "Hotels" (restaurants).

  1. Slice onions and mushrooms. Chop tomatoes. Tomatoes must be peeled before chopping, and onions and mushrooms must not be chopped too thinly.
  2. Heat 3 Tbsp of the olive oil in a heavy-based kadai/wok. Add the sliced onion and saute for about a minute till softened.
  3. Next, add the ginger-garlic paste and continue cooking till the rawness of the ginger and garlic dissipates. Just about a minute more.
  4. At the same time, on a separate burner( in a nonstick pan/wok), heat the remaining olive oil and add the sliced mushrooms. Fry on high heat till they are cooked and reduced well. Cook till most of the liquids run dry.
  5. When the onion mixture is lightly colored, add the chopped tomatoes, raise the heat, and cook down, with frequent stirring, for another 2 minutes. The tomatoes should be cooked down to a pulp.
  6. Add the fried mushrooms along with the liquids.
  7. Add salt at this stage. Be careful not to add too much salt. Add less at first; you can add more later if you need to.
  8. Add the spice powders at this stage. Mix well, just till fragrant. Add the chopped mint and coriander and stir through.
  9. Add 1 to 2 cups of water (1 cup=240ml) according to how much gravy you like, but not more than 2 cups, as this curry is meant to be of a thicker consistency. Do a taste test and add more salt now, only if needed
  10. Bring to a boil on high. Now cover, reduce the heat to the lowest setting and cook for 10 minutes.
  11. Open, raise the heat a bit and cook down some more, with regular stirring ( 1-2 minutes more), till reduced and the gravy thickens.
  12. Delicious South Indian style Mushroom Masala is ready!
