Creamy Coconut Mac and Cheese (Vegan)
Description
A good example of plant-based comfort food, proving that you don't need dairy to achieve that nostalgic, velvety "boxed mac" satisfaction. This recipe avoids the fuss of complicated nut-soaking or high-speed blending, involved in other vegan recipes. Instead, it relies on a clever 5-ingredient pantry-style base that delivers a silky, golden sauce in just minutes. By utilizing the natural starch of the pasta and the savory, nutty "gold" of nutritional yeast, we create a luscious coating that clings to every elbow noodle. It’s a warm, that satisfies the cheese cravings while remaining light, clean, and entirely vegan.

Cook the pasta to Al dente, following package instructions, adding sufficient salt to a large pot of boiling water before adding the pasta. It should be cooked in 8-12 minutes. Drain and reserve the cooking liquid.

Make the sauce. In a large saucepan, add Kara Coconut cream along with 1 cup of the pasta cooking liquid. Use a whisk to combine and slowly bring to a heat, on low.

Add the nutritional yeast, tapioca flour, corn flour, onion, garlic, and white pepper powders, paprika, mustard, and soy sauce. Stir everything and make sure there are no lumps.

Add the bay leaf and dried chives, and stir again. Add salt only if needed… Remember the cooked pasta and the cooking liquid have salt.

Simmer the sauce till thickened and then add more pasta liquid to adjust to your desired consistency. Stir though.

Lastly, add lemon juice and (optional) liquid smoke.

Add the drained pasta to the sauce now, and toss well till nicely coated with the cheesy sauce.

Serve hot!
Note
- Al dente means “to the tooth” in Italian. Most pasta packages provide cooking times for cooking al dente pasta. If not, just turn off the heat about two or three minutes before the prescribed cooking time.
- A good spoonful of salt is added while boiling the pasta, so the sauce requires little or no extra salt.
- Lemon juice is added to balance and bring together all the flavors. It is added last.
- Key Ingredients: Pasta, Coconut Cream, Nutritional Yeast, Tapioca flour, Corn flour, Spices, Herbs, Seasoning, Lemon, Salt.
