Description

If you love cheesecake but need a no-fuss dessert, the Lemon Cloud Pie is your new go-to. This stunningly light and no-bake pie delivers a beautiful balance of tangy lemon and creamy, cloud-like sweetness—all without turning on your oven!

The secret to its unique flavor and structure lies in two unexpected ingredients. First, deeply chilled evaporated milk is whipped to a wonderful, airy pudding consistency. Second, the crust is made from crushed Ritz crackers instead of the usual graham crackers. The subtle saltiness of the Ritz crackers cuts through the sweet, tart filling, creating a delectable contrast that makes this pie unforgettable.

Easy enough for a quick weeknight treat but elegant enough for a special occasion, this is the perfect make-ahead dessert. Just assemble it, chill it overnight for the best texture, and prepare for a chorus of compliments.

  1. Add the evaporated milk to a shallow bowl. Place this in the freezer till it starts to freeze and crystallize around the edges and top only.
  2. Put the Ritz crackers (salt biscuits) in a food processor and process to a crumb.
  3. Add this to a bowl and add the melted butter. Mix well.
  4. Press 3/4 of this mixture into a  9 "  greased Pie dish on the bottom and sides.
  5. Refrigerate the pie base, covered, till chilled, reserving the remaining crumbs for later (for topping).
  6. Heat one cup of water in a saucepan and add the lemon Jell-O. Stir well, once it starts to boil, remove from heat.
  7. Pour this into a bowl and refrigerate till it thickens slightly. It will not set into jello, just a syrupy thick texture.
  8. Add the sugar and Vanilla bean paste into a third bowl. Whisk well to mix the vanilla throughout the sugar evenly. Set aside this vanilla sugar.
  9. Add the thickened jello water to this and whisk well.
  10. Add freshly squeezed lemon juice and stir through.
  11. Once the evaporated milk has crystallized somewhat, remove from fridge and use a wire whisk to beat till it's slightly stiff.
  12. Pour this into the Jello- Sugar mixture and mix once again.
  13. Pour over the chilled pie crust. Add the remaining biscuit crumbs evenly over the top.. Lightly sprinkle so that you don't disturb the filling.
  14. Cover with foil or Saran Wrap and chill completely. 3 hours at least, and best results with overnight chilling.

Note

  • Only use freshly squeezed lemon juice. Using extract will ruin this dessert.
  • Ritz crackers are salt biscuits. It works well in this recipe. You could replace it with Graham crackers for a different taste.
  • You could experiment here with other flavors of Jell-O.
