Kale Stir Fry with Coconut (Kale Thoran)

Description

Thoran is a staple side dish in Kerala. generally refers to a dry stir-fry of finely chopped or shredded vegetables mixed with grated coconut and tempered with spices. Here, we prepare it with a non-traditional vegetable in Kerala cuisine. Kale Thoran is a healthy side dish with rice.

  1. Remove the leaves from the central stem, simply by tearing off, from both sides. You should have a large colander full of leaves.
  2. Rub the leaves against the colander as you rinse under running water. Scrub and rinse well.
  3. Shake off all the excess water or use a salad spinner.
  4. Add in batches to a food processor and pulse a few times, to get a finely chopped texture. Don't process too long, that you get a 'pesto' texture.
  5. Heat the coconut oil in a wide, high rimmed pan or wok. Nonstick, wide wok with larger surface area, works best.
  6. When the oil is hot, add the mustard seeds and allow to pop.
  7. Add the sliced shallots, and saute till softened. Add the turmeric powder and stir.
  8. Now, add the finely chopped kale in handfuls, stirring in the pan, allowing to cook briefly (about 10 seconds) before the next addition.
  9. As you cook, the raw pungency of the kale decreases, you can smell it as it gets cooked. The kale also reduces in volume considerably.
  10. Once all the kale is added, slowly by handfuls, add garlic powder and stir through.
  11. Move the kale to the sides of the wok, making a well/space in the centre. Add the grated coconut here, and then cover up with the stir-fried kale from all sides, making a mound of kale in the centre of the wok.
  12. Reduce the heat, allowing some steam to build up (1 minute).
  13. Now raise the heat and stir-fry vigorously, allowing the coconut to mix through thoroughly with the kale.
  14. Add salt to taste, a little at a time. It's very easy to over-salt your kale.
  15. Keep stir-frying till the kale is softened and seasoned to liking. Add a little coconut oil right at the end, over the top.
  16. This is great as a side with rice. Also, if you chill it, add chopped apple, walnuts and dried cranberries, it makes a nice salad! Do try and let me know!

Note

  • If you would rather, have this as a cold salad, cook it as in the instructions, but then allow it to cool, adding, chopped apple, walnuts, and dried fruit like cranberries!

  1. Hi Shana! On youtube you have demonstrated Kale stir fry, which I liked very much. Plan to make it tomorrow. But meanwhile do tell me, the pan you have used, is it stone? Looks very very efficient. Can you tell me where I can find it?

      Yes it is stone cookware quite conmon these days. I our purchased mine here in Singapore from the local supermarket! Korean brands are popular for This tupe of cookware. I’m sure you can find it online too . I use K Art
