Instant batter Rice Crepes, come in handy when you want a savory breakfast and have not planned the night before. Also known as Kalakki Chutta Pathiri, this is often made in Kerala, Muslim homes. Good to serve with Breakfast curry or Roasts.

Instant Rice Flour Crepes

Description

An instant rice flour crepe recipe, that comes in handy, if you already have curries prepared, suitable for Kerala style breakfasts.

Ingredients:

  1. Add the rice to a container and add the warm water. Not Boiling, Not lukewarm. Quite warm rather.
  2. Stir till there are no lumps. It should be a very thick batter.
  3. Cover and allow to rest in a warm place or room temp for ½ to 1 hour.
  4. Now add room temp water and salt to make a very loose batter( looser than ‘dosa’ batter)
  5. Heat a non-stick pan or ‘appa chatti’. Wipe with Coconut oil.
  6. Pour a ladle full of batter onto the heated pan.
  7. You will see bubbles forming. Once many bubbles have formed and popped, add a few drops of coconut oil around the edges, cover the pan and allow to cook for 1-2 minutes on low heat.
  8. Lift away with a flexible plastic spatula.
  9. Repeat for the entire batter.
  10. The crepes should be light. If you find that the first one is heavy around the centre add more water.
  11. Stir well before each crepe is made to loosen the flour that has settled to the bottom of the container.
