Indian Milk Tea

Indian Milk Tea
Description
Indian milk tea, known simply as chai (which is the Hindi word for "tea"), is a staple beverage and a cultural institution in India. It is a rich, robust, and comforting drink that is fundamentally different from a typical Western-style tea with a splash of milk.
In India, it's the first thing many people have in the morning, a source of comfort on a cold day, and a key element of hospitality. You can find it everywhere, from bustling city cafes to small roadside stalls called chai wallahs, who are masters of brewing the perfect, frothy cup. This is how to make plain milk tea without any spices(Masala Chai).
Ingredients:
For 1 cup of tea, using Brook Bond™ Red Label Tea. (Indian Tea with Milk)
For 1 cup of tea, using Lipton™ Yellow Label Tea Bags. (Indian Tea with Milk)
For 4 cups of tea using Brook Bond™ Red Label Tea. (Indian Tea with Milk)
Instructions
For 1 cup of tea, using Brook Bond™ Red Label Tea. (Indian Tea with Milk)

Add the sugar to your teacup and place the tea strainer on top.

Add both the milk and water to a saucepan.

Heat till you see bubbles on the sides of the saucepan.

You will see a thin layer of cream forming on the surface of the milk.

Add the tea leaf granules to the centre of the saucepan, thereby breaking the film of cream and allowing the milk to bubble over.

Cover with a lid, reduce heat - for just a few seconds.

Uncover and strain into the prepared cup through a tea strainer from a good height. This helps to make the tea more bubbly.

Proceed to perform the "Pulling of the tea" - Pour from the cup into a washed-out saucepan and then back into the cup a couple of times from as high as possible. This improves the flavour of the tea and this step must not be omitted.

Serve Hot. (Tea cools down rather quickly).
For 1 cup of tea, using Lipton™ Yellow Label Tea Bags. (Indian Tea with Milk)

Cut out 4 tea bags and set aside the powdered tea leaf.

Add both the milk and water to a saucepan.

Heat till you see bubbles on the sides of the saucepan.

You will see a thin layer of cream forming on the surface of the milk.

Add the tea leaf powder to the centre of the saucepan, thereby break the film of cream and allowing the milk to bubble over.

Stir till you get the desired colour for your tea.

Strain into the prepared cup through a tea strainer from a good height. This helps to make the tea more bubbly.

Proceed to perform the "Pulling of the tea" - Pour from the cup into a washed-out saucepan and then back into the cup a couple of times from as high as possible. This improves the flavour of the tea and this step must not be omitted.

Add the milk and water to a saucepan of appropriate size.

Heat till you see bubbles on the sides of the saucepan.

Add the tea leaf granules to the centre of the saucepan, thereby break the film of cream and allowing the milk to bubble over.

Note
- To make it easy to remember: You need 1 Tbsp of Brook Bond™ Red Label Tea for every cup of tea PLUS a Tbsp for the pot. So 3 Tbsp for 2 cups of tea, 4 Tbsp for 3 cups of tea etc...
- This may seem like a large quantity of tea, but it ensures a great cup of tea. Do not boil for long. Strain quickly. (Keeping in mind that large tea leaves are used, not the superfine powder).
- You need 2 tsp of sugar for each cup of tea, a cup being 200 mls.
- If fine tea dust/[owder is used.. you only use 1 small tsp per cup. My recipe is for the larger tea leaves.
- If you like a milkier taste and smell for your tea.
