Honeydew Katira Drink | Ramadan Drink
Description
You will most commonly find Air Katira at Ramadan Bazaars (like Geylang Serai in Singapore or various Pasar Malamin Johor, Malaysia). It is the ultimate "rehydration" drink after a day of fasting because it is served ice-cold and contains ingredients believed to soothe internal body heat. The key ingredients are Katira Gum (Tragacanth Gum), Basil Seeds (Biji Selasih), and Malva Nuts (Kembang Semangkuk) in a creamy milk mixture. The Honeydew version is a modern, vibrant green variation that combines the cooling properties of traditional ingredients with the fresh, fruity taste of melon.

Soak the Gum Tragacanth in a large bowl of water for 5- 7 hours (overnight), till it fills the water and looks like jelly.

Also, soak the Boat Sterculia Seeds. It will grow into looking like something that totally lives under the sea. :)

Remove the seed and the skin from the soaked mixture and keep only the 'jelly-like' part.

Basil seeds need to be soaked till they expand/swell up as well.

Add the milk to a saucepan and bring to a simmer. Stir in the condensed milk.

Tear the washed Pandan leaves through the centre (to release scent and flavor) and add to the milk. Simmer 10 minutes, stirring occasionally.

Take off the heat and refrigerate till completely chilled.

When time to serve, add the honeydew melon to a blender and blend without water. Add the chilled Honeydew-Pandan Milk and blend again. You can add 2 drops of green food color if you like.

To a 1.5-liter jug, add ice cubes, followed by the soaked ingredients (you might not need to add it all).

Add the chillied Honey Dew Milk to the capacity of the jug. Stir well! Serve cold.
Note
- If you don't have or don't like the flavor of Pandan, omit it.
- Honeydew must be very fresh and blended only prior to mixing the drink.
- Careful not to add too many ingredients for soaking. We want just a quarter of the jug filled with these ingredients.
- Key Ingredients: Milk, Water, Honeydew, Pandan Leaves, Condensed Milk Gum Tragacanth, Basil Seeds, Malva Nuts.
