How to make Garlic Mayonnaise (Easy Mixi-Jar Recipe)

Description

This is not your average sandwich spread; it is a velvety, pungent, and artisanal garlic mayo that rivals a high-end restaurant’s aioli. Using a "mixi-jar" or immersion blender technique, this recipe transforms basic pantry staples into a thick, glossy sauce that is far superior to any jarred version.

  1. Start off by making sure the mixi-jar is absolutely dry.
  2. Add the (white only) of one egg.
  3. Add two large cloves of garlic.
  4. Add salt and pepper.
  5. Pour in 1/4 cup only of the oil. Or even less than that.
  6. Close the mixer jar and run on speed setting 2. Not the highest or lowest speed. Just run till you see the mixture turning white.
  7. Open. You will see it has turned white but is still very liquid.
  8. Add another 1/4 cup of oil as well as vinegar, depending on the amount of oil being used (3/4 Tbsp for 3/4 cup total oil OR 1 Tbsp vinegar for 1 cup total oil).
  9. Close the mixi-jar and run again briefly till thickened. Open again. It should be a more creamy texture now.
  10. Add the next addition of oil and run again briefly. Open. Now you will see the sauce is quite thick this time.
  11. Add the last addition of oil and run again briefly. Open. The sauce is the right consistency but may have a slightly oily residue on top
  12. Add the cold water and stir through with a spoon. Close the mixi-jar and run for just a few seconds again.
  13. Your Garlic Mayo is ready. Chill for 30 minutes, and it will set thicker, before using. Makes 1 cup.

Note

  1. Don't use too much garlic here, to avoid tongue burn. 2 extra-large cloves are perfect.
  2. I always get the best results with sunflower oil. However, canola, vegetable, and rapeseed oils are also used.
