Garlic Green Beans Chinese Stir Fry
Description
The Garlic Green Beans (Chinese Stir-fry) is the epitome of minimalist Asian cooking. Humble French beans are transformed into a vibrant, snappy side dish that rivals any high-end Chinese restaurant. High heat cooking and specific seasoning in perfect balance to keep them bright green and perfectly "tender-crisp."

Bring a saucepan of lightly salted water to a boil

Add the chopped beans and cook just under a minute, till blanched and the beans turn bright green.

Quickly drain and plunge the beans into cold water to stop the cooking process and also preserve the color.

Heat the oil in a wok and add the garlic. When fragrant and before changing in color, add the beans and chilli.

Stir fry for just under a minute.

Add the salt and sugar and stir just till the sugar dissolves.

Add soy sauce and stir fry for just under a minute more, till the beans are perfectly crisp-tender.

These beans may be served hot or cold. We love it along with steamed rice or bee hoon.
Note
- TAKE CARE not to overcook the beans. Beans are blanched in just under a minute and cooked on high heat for about two minutes. They should stay crisp but tender.
- Young, tender smaller beans can be left whole, or cut into half.
- Long Beans(snake beans) may be used here also.
- Key Ingredients: Beans, Garlic, Chilli, Oil, Sugar, Salt, Soy sauce.
