Fish Fry ROASTEE

Description

Crisp shallow fry meets rich masala roast. What sets this recipe apart is the 'pan-tossing' method. Rather than serving the fish in isolation, it is finished in a hot skillet with fresh aromatics that pick up the leftover spice sediments (the masala residue). Infused with the earthy aroma of fennel and the sharp brightness of curry leaves, this dish transforms a simple piece of seafood into a centerpiece. With the right technique, simple ingredients can produce professional-grade, 'flame-kissed' results at home."

  1. Rinse the fish well. Rub with salt. Rinse once again. If using whole fish, make sure it is cleaned well, and make gashes in it, for the marinade to penetrate.
  2. Crush the garlic and ginger, to a fine paste. Add this and all the spice powders, as well as salt, to the fish. Rub well and marinate 30 minutes at least- up to 3 hours.
  3. Heat coconut oil or other preferred oil for shallow frying in a skillet.
  4. Lay the fish in one layer and fry on medium heat till browned on one side, about 3 minutes. Do not fry fish on high flames.
  5. Flip the fish pieces over gently. Once all pieces are flipped, raise the heat and place the onion rings, sliced tomato, and green chilli over the top. DO NOT STIR.
  6. Reduce the heat again to medium. Fry again till the second side turns golden brown. After about 2 minutes, check under one piece, from the side of the pan, without mixing the sliced ingredients laid on top.
  7. Once you have checked that the fish is indeed golden brown, start tossing the pan. Raise the heat. Toss and flip the fish and sliced ingredients together, so that flames are introduced into the pan. (Refer to Video)
  8. Add the curry leaves. Continue this tossing, and getting some flaming action into the pan, till it smells very delicious and the tomatoes are softened.
  9. Remove to a serving plate.  Unique and delicious Fish fry ROASTEE is ready. Serve hot over steamed rice.
