EASY Layered Ice Cream Sundae Pie

Description

This Easy Layered Ice Cream Sundae Pie is a show-stopping, "no-bake" dessert perfect for after-meal desserts and warm-weather gatherings. It is a hit with kids and adults alike, combining the nostalgia of a hot fudge sundae with the elegant presentation of a frozen tart. It relies on a high-contrast play between a crunchy, dark crust and layers of creamy, softened ice cream.

  1. Remove the Oreo Cookies from the packaging and remove all the cream centers.
  2. Add in batches to a processor and process to a fine crumb.
  3. Add the Oreo crumbs to a bowl and add in the melted /softened butter. Mix with hands till evenly mixed through.
  4. Add the prepared crumb mixture into a 10-inch springform cake pan (freezer-safe). Use a cup to gently press the mixture evenly into the base.
  5. Add a layer of chocolate ice cream and spread it as evenly as possible.
  6. Do the same with a layer of vanilla ice cream.
  7. Cover the pan and place back in the freezer till set. At least 1-2 hours.
  8. Prepare the Chocolate Shell Topping:  Add the Hershey's chocolate bars into a microwave-safe bowl, along with the vegetable shortening and virgin coconut oil.
  9. Microwave on high for 1 minute till the chocolate begins to melt.
  10. Stir well. Microwave for consecutive bursts of 30 seconds, stirring between each burst, JUST till the mixture is melted smooth.
  11. Pour this melted chocolate mixture over the top of the Ice cream pie. Spread it out quickly, since it will quickly harden to create the Chocolate 'Shell' topping.
  12. Decorate with some piped whipped cream from a can and chocolate shavings, if desired.
  13. Enjoy.

Note

  • Do not add extra melted butter to the cookie base. Once frozen, it will set too hard if you do so.
  • You can use all sorts of ice cream combinations, but ours is a great one to try out first.
  • Add a thin layer of our burnt caramel ice cream for a different flavor experience.
  • I have used Kit-Kat Chocolate and Nestle Vanilla ice creams, and Hershey's Milk and Dark chocolate bars in this recipe.
