Cold Coffee Pudding

  1. Prepare the Coffee-Cocoa-Milk: Add the Milk(2cups) along with Coffee(3/4Tbsp), Cocoa(1/2Tbsp), and Sugar(21/2Tbsp) to a saucepan and beat using a whisk as you heat it. Heat just till the cocoa is completely dissolved. Remove from the heat and allow it to cool off.

  2. Beaten Coffee-Cocoa-Milk: To a cup, add Milk(2Tbsp) along with Coffee(3/4Tbsp), Cocoa(1/2Tbsp). Beat this using a whisk and set aside.

  3. Prepare whipped cream using dry whipped cream powder, ice-cold milk, and vanilla extract

  4. Alternatively, use chilled whipped cream and sugar. You can see how -here.
  5. Add the beaten coffee mixture and whip again till stiff.
  6. Soak the rusks in the cooled Coffee-Cocoa-Milk, one at a time, and line a casserole dish or cake pan (2 layers of soaked rusk, loosely packed).
  7. Add the Coffee whipped cream over the top and gently spread with an offset spatula.
  8. Add a small amount of chocolate syrup drizzled over the top, and decorate with a toothpick to create a marbled effect.
  9. Finally, sprinkle the chocolate chips and sprinkles over the top.  Recommended: Mini Chocolate chips are a good addition for some added flavor and bite.
  10. Freeze, covered for 2 hours, and then keep in the fridge, till serving time.

Note

  • For this recipe, we need about 3 cups of whipped cream. (I have used whipped cream powder. Just follow the instructions, add milk as recommended, and beat till soft peaks form. Whipped cream powder is usually already sweetened. If you are using 'whipping cream' instead, you must add sufficient icing sugar during the whipping process to make sweetened whipped cream.
  • You can use any casserole dish for this dessert, or a cake pan. I used a loose-based cake pan here.Key Ingredients: Whipping Cream, Unflavoured Rusk, Milk, Sugar, Coffee, Cocoa, Vanilla.
