Chinese Veg Stir-Fry
Description
This beginner-friendly stir fry is designed to clear out your fridge while delivering a professional, glossy finish. The combination of soy and oyster sauce (with a vegetarian option) coats a colorful medley of fresh vegetables, allowing for the addition of scrambled eggs to transform the dish into a more substantial, protein-rich meal.

Make sure all the vegies are FRESH, washed, drained and cut into bite size pieces.

Heat oil in a wide wok, add the garlic till golden and remove.

Add the spring onions and soften

Add the potato first, followed by the vegetables one at a time and stir fry till the toughest veg is cooked crisp. Add soy sauce, oyster sauce, salt, pepper and a sprinkling of water if needed.

Cover and cook for 2 minutes on low.

Stir well. Once the veggies are cooked, increase heat to high, IF USING EGG : add the egg and scramble like you mean it, till the egg is cooked.

Add the cornflour solution and toss well till the vegetables are glossy.

Garnish with the celery and spring onion greens.
Note
- You can play around with different vegetables; Celery,Mushrooms,Snow Peas, Baby Corn etc. You can also add large red chillies ,sliced for color and kick.
- You can omit the egg altogether if desired.
