Chinese Green Chilli Egg
Description
This flavorful and aromatic dish, inspired by the bold flavors of Hunan cuisine, transforms humble eggs into a "fancy" yet effortless stir-fry that is perfect for a quick weeknight dinner or as a standout side dish.

Prepare the instant red chilli sauce: De-seed the red chilli, and chop up. Add this along with 2 cloves of garlic, ginger, rice vinegar, salt(1/4 tsp) and sugar to a mini chopper or grinder. Grind coarsely and add to a bowl. Add a dash of water and adjust the sugar, salt and vinegar to taste. Set aside.

Beat the eggs with soup seasoning or Salt and White Pepper, to taste. Add a splash of water to make the eggs fluffier. Set aside.

Chop the chillies as desired. De-seed if needed.

Heat 1-2 Tbsp of oil in a wok or pan. Add the beaten egg and allow to set lightly along the edges. Then fold in from the edges to the centre. Keep folding over the cooked parts into the uncooked centre till it is just set but still very soft(Takes just about 1 minute on medium heat). Remove quickly to a plate to stop the cooking process.

Add some more oil to the pan and saute the minced garlic till fragrant. Add the chilli sauce, turn up the heat and cook till deep red and the oil separates.

Now add the chopped chilli and saute till softened. Stir in the black bean garlic sauce.

Return the egg to the pan and toss well to absorb all the flavours evenly.

Lastly, add a dash of Sesame oil. Remove to a serving plate and garnish with spring onion greens.
Note
- Fermented Black Bean: 'Douchi' or tochi is made by fermenting and salting black soybeans. It is a very popular ingredient in Chinese cuisine.
- Along with the chopped green chilli, you may add some julienned or chopped red chilli, for a pop of colour.
- I like to use Chinese screw chilli peppers for this recipe (pictured above). They are mild in heat and have a green chilli-pepper aroma. They also have a slight scent of bell pepper. You can use any similar peppers. Bell pepper is an option if you are afraid of chillies, but you don't get that chilli aroma, which is very appetising and makes this dish more appealing.
- The instant Red chilli sauce used here is a very nice condiment on its own. Try it along with Chicken Rice or plain rice or as a dipping sauce for spring rolls.Key Ingredients: Eggs, Green Chillies, Red Chilli, Garlic, Ginger, Spring Onion, Rice Vinegar, Black Bean Sauce, Salt, Sugar, and Seasoning.
