Description

Unlike a saucy curry, this recipe focuses on creating a rich, and intensely spiced coating on tender pieces of beef. The cooking process involves two main steps: first, the beef is pressure-cooked until it's perfectly tender, and then it is "fried" or stir-fried in a hot pan with a vibrant mix of spices, aromatics, and sometimes, slivers of coconut. The result is a dish with a deep, earthy flavor and a fiery kick that is utterly addictive.

  1. Prepare the ginger juice first as it is required to settle.
  2. Wash the beef  thoroughly. Rub with vinegar to remove any meaty smell. Rinse out well and drain.
  3. Prepare all the other marinade ingredients and marinate the beef for 1 hour.
  4. Pressure cook for 10 steam whistles  or cook beef till tender.
  5. Continue cooking to allow the moisture from the beef to evaporate without dying out the meat.
  6. Set aside.
  7. In a large wok, heat enough oil to saute all our ingredients.
  8. Add the garlic and ginger and saute well till softened.
  9. Add onions and saute.
  10. Add the green chillies and curry leaves and saute well Add the green chillies and curry leaves and saute well  for 5 minutes.
  11. Add the tomatoes and keep cooking till the tomatoes cook down into a thick mixture. About 3 minutes.
  12. Now add the meat masala and chilly powder and stir till aromatic.
  13. Add the cooked meat and stir fry for a while till nicely coated.
  14. Add a little water if needed to loosen the mixture and cook shortly.
  15. Add the minced bell pepper/capsicum and stir once. Turn off heat and cover.
  16. Heat 1 Tbsp oil separately and sprinkle some chilly powder in it. Allow to sizzle and then pour over our cooked meat. Allow to rest for 10 minutes, Then serve!
