We use a microwave oven to saute the ingredients, in this recipe, for ease and convenience. If you do not have a microwave oven, saute the ingredients, on medium flames to achieve the same texture and consistency as in the video.
Total time is not inclusive of 30 minutes marination.

Broasted Chicken Bites
Description
Broasted chicken bites are essentially smaller, bite-sized pieces of fried chicken mimicking a "broasted chicken" flavor With a special marinade and coating, it is exceptionally moist on the inside and crispy on the outside.

Add the garlic, ginger and the roughly chopped onion to a small processor to get a finely chopped texture. Don’t grind to a paste. Some texture should remain. Of course, you can do this by hand, but it would take a whole lot more time to get the finely chopped texture.

Add the finely chopped mix to a microwave safe bowl. Pour in the olive oil and mix well.

Microwave on HIGH for 3 minutes. Open and stir, Microwave another 30 seconds.

Meanwhile, add the roughly chopped tomato to the same processor and grind to get a fresh puree.

Add this fresh tomato puree to the bowl of microwave sauteed ingredients. Stir well.

Microwave again on HIGH for 3 minutes at a time, opening to stir. We should get a thickened paste. It took me 9 minutes, total.

Add half a teaspoon each of salt and pepper to the sauteed paste and allows to cool off a bit.

Pat dry the chicken pieces and sprinkle with salt and pepper.

Add the prepared paste and rub well into the chicken pieces. Also, add the chili flakes.

Prick gently all over with a fork to help penetrate the flavors.

Set aside to marinate in this cooked mixture for 30 minutes.

Heat oil for deep frying in batches.

Add the flour to a large bowl and add the remaining salt and pepper to season.

Coat each piece with the flour coating. Make sure to coat thoroughly. Since the marinade is sticky, the flour adheres easily here without any bunding agent.

Add one batch at a time to the hot oil. Do not overcrowd. Once in oil, leave without moving for the first 1 1 and a half minute. This is to prevent the coating from coming off.

After 1-2 minutes, turn over the pieces gently and fry the other side, another 2 minutes, max. Do not over fry.

Once golden and crisp remove to kitchen paper towel.

Serve with garlic chilli mayo dip!

- Use the same method to make fried fish finger bites.
