Breakfast Egg Bites (Sausage and Spinach)

Elevate your morning routine with these customizable, protein-packed Breakfast Egg Bites. Perfect for busy weekdays or a weekend brunch, these savory morsels combine the richness of fluffy eggs with hearty sausage, fresh spinach, and a blend of Parmesan and cheddar cheeses. They offer a sophisticated, bite-sized alternative to the traditional scramble, making them an ideal choice for grab-and-go nutrition without sacrificing flavor.

Instructions

Cook the sausages in a frying pan with just a little bit of oil.

Preheat oven to 185 °C (365 °F).

Slice the sausages up. Grate the cheese. Rinse and chop the spinach.

Beat the eggs with parmesan, cream, salt and pepper.

Lightly brush the inner cups of the muffin pan.

Add a layer of cheddar cheese, followed by cooked sausage and spinach.

Pour the egg mixture equally into each cup.

Bake for 20 minutes.

Allow to set for 5 minutes before removing from the muffin pan. Do so by going around the edges with a small knife or spatula and lifting out.

Top with chilli flakes and serve.
Note
- If using cream, fill the muffin pan only 3/4 the way up. Allow room for rising, without overspilling.
- You might have a little egg mixture left (if using a small muffin pan) I usually add this to a silicone cupcake mold and bake it along with the muffin pan.
- You can add other fillings like peppers, tomato, olives, and broccoli.. Play around with the fillings.Key Ingredients: Eggs, Cheese, Seasoning, Sausage, Spinach.
