Bitter Gourd Stir Fry (Pavakka Mezhukkupuratti)
Description
Bitter gourd Stir fry ( Pavakka Mezhukkupuratti in Malayalam ) is a simple yet flavorful and often slightly bitter (in a good way for those who enjoy it) stir-fried dish from Kerala. "Mezhukkupuratti" refers to any dry-ish vegetable stir-fry, typically involving minimal spices and allowing the main vegetable's flavor to shine through. The addition of tomatoes makes the stir fry, moist and a super side dish with rice. I love this one!

Rinse the bitter gourd. Slice in half lengthwise. Scrape out the seeds and cut in half circle shapes slices. You can chop smaller, but I prefer it this way.

Heat the coconut oil in a heavy based wok. Add the mustard seeds and allow to splutter.

Once popped, add the chopped onion, garlic, green chilli and curry leaves.

Saute just till the onions are softening. Do this on a low heat, slowly.. it takes about 3 minutes.

Add the sliced bitter gourd slices now and continue cooking.. First cook on high for 1 minute, with coninuous stirring.

Reduce heat and cover, cooking about 1 1/2 minutes, opening occasionally to scrape from the bottom and stir through.

After 1 1/2 minutes, the color has darkened a bit, and the bittermelon has softened. It is still very bitter at this stage.

Add the chopped tomatoes and continue cooking. Once the tomatoes, have started to soften, add salt and sugar. Add only 1/2 tsp salt to begin with. You can add more later.

Once the tomatos are softened further and masheable, cover again and cook on low for 1 – 2 minutes.

Open, scrape all ingredients from bottom of wok, it’s full of flavor. Taste and add upto 1/2 tsp more of salt or to taste.

Once the gourd is totally cookes and the tomatoes have blended into the dish.. finally add the chilli powder and just cook through.

Serve with rice! Yum!

- Try this recipe with ladies finger too.. It’s yummy.
