How to make Jamaican Rice and Peas – Recipe at a glance:

  • Jamaican Rice and Peas is a soulful one-pot dish. It starts with dried kidney beans that are soaked (traditionally overnight) and then simmered until tender. Once the beans are ready, long-grain rice is added to the pot along with creamy coconut milk, fresh aromatic herbs like thyme and scallions, and often a whole Scotch bonnet pepper for flavor (not necessarily heat). Add mild seasoning spices. The mixture is brought to a boil, then reduced to a gentle simmer, covered tightly, and cooked until the rice is fluffy and all the liquid is absorbed. Finally, it’s left to rest, allowing the flavors to meld and the rice to achieve its perfect texture. It is served as a side dish with dishes like stews, vegetables or jerk chicken.
