Kerala Egg Puffs

Description

Kerala Egg Puffs, also known as Mutta Puffs in Malayalam, are a hugely popular and delicious savory snack found in bakeries and street food stalls across Kerala, India. They are characterized by a flaky, buttery, golden-brown puff pastry encasing a flavorful and slightly spiced filling that features caramelized onions and hard-boiled eggs.

  1. Leave the puff pastry out at room temperature to allow it to thaw and soften. Follow package instruction.
  2. Boil the eggs and set aside.
  3. Heat the oil in a nonstick pan.
  4. Add the curry leaves and allow to splutter.
  5. Add the minced garlic followed by the onion and stir regularly for 10 minutes on low heat till softened.
  6. Next add the spice powder ( turmeric, pepper powder, garam masala). Stir till the spices are cooked – 30 seconds or so.
  7. Lastly add the ketchup, lime juice, and salt and stir through. Set aside.
  8. Preheat oven to 200ºc / 400ºf.
  9. Prepare egg wash by beating 1 egg with 1 Tbsp water.
  10. Roll out the pastry sheet ( which is thawed and softened by now) on a floured surface to roughly a 15 x 15-inch rectangle.
  11. Use a pastry cutter, to cut …… small rectangular sheets, approximately the width, and length of your hand.
  12. Peel and slice the boiled eggs lengthwise.
  13. Place 2 Tbsp of sauteed filling on one sheet and place one half of a boiled egg on the center. Fold over the pastry.
  14. Pinch the to open edges, to seal. You can leave the 2 sides open, just press lightly. Tuck in any onion masala, to prevent it from getting burnt during baking. (Refer Video).
  15. Continue preparing all the puff pastry in this manner.
  16. Place the pastries on a baking tray lined with parchment paper.
  17. Brush all the puffs lightly with the egg wash.
  18. Bake on a lower rack of the preheated oven for about 15- 20 minutes, till golden and puffed. Oven timings may vary – watch for golden puffed pastries).

  • Don’t leave the baked puffs in the oven too long, or they tend to steam and lose the flakiness and also the flavor changes. You can time the baking to be ready 30 minutes before serving for the tastiest results.
