Sweet Corn Egg Drop Soup

Theres nothing quite as comforting as a nice hot  bowl of soup!!! Perfectly soothing even when we are down with  the flu,soothing to the throat,head and nose. Also, studies say that having any soup either hearty or light before a meal can  actually help us to reduce the amount of calories we would otherwise consume. Try this great recipe for Sweet Corn Egg Drop Soup. It’s a pleaser.

Sweet Corn Egg Drop Soup




Ingredients:

  • 2 shallots or the white section of spring onion
  • *(1 cube chicken bouillon + 1 cup water) OR 1 cup chicken stock)
  • ¾ Tbsp flour
  • 1 Tbsp butter
  • 1 cup low fat milk
  • 1 can cream style corn
  • 1- 2 eggs (beaten with a pinch of salt)
  • salt and pepper to taste
  • Celery /Spring Onion shoots


Method:
  • Heat butter. Saute shallots.
  • *If using chicken bouillon cube , add now and mash.
  • Add flour and cook. Don’t brown.
  • Add milk and *water OR stock.
  • Bring to boil and allow to thicken on medium heat.
  • Add cream style corn, salt and pepper.
  • Important – Whilst stirring the soup gently with one hand, pour in the egg in a thin stream, slowly till the beaten egg is used up.
  • Cover the pot and turn off flame.
  • Allow to sit a few minutes. Serve.

Notes:

  • This soup is great just as it is. Some like a dash of black pepper over the top, others some green chilly sauce.
  • You can garnish with some chopped scallions.
