SweetCorn Egg Drop Soup

SweetCorn Egg Drop Soup


  • 2 ‏shallots or the white bulb section of spring onion
  • *1 cup ‏water plus 1 chicken bouillon cube OR 1 cup chicken stock / You may also use vegetable stock
  • ¾ Tbsp ‏flour
  • 1 Tbsp ‏butter
  • 1 cup ‏low fat milk
  • 1 can ‏cream style corn
  • 1- 2 ‏eggs, beaten with a pinch of salt
  • To taste, ‏salt and pepper
  • As needed, ‏celery /spring onion shoots - for garnish


  1. Heat butter in a stock pot. Saute shallots.
  2. *If using chicken bouillon cube , add now and mash.
  3. Add flour and cook. Don’t brown.
  4. Add milk and *water OR stock.
  5. Bring to boil and allow to thicken on medium heat.
  6. Add cream style corn, salt and pepper.
  7. Important – Whilst stirring the soup gently with one hand, pour in the egg in a thin stream, slowly till the beaten egg is used up.
  8. Cover the pot and turn off flame.
  9. Allow to sit a few minutes. Serve, garnished as desired.

SweetCorn Egg Drop Soup


  • This soup is great just as it is. Some like a dash of black pepper over the top, others some green chilly sauce or green chilli vinegar.
  • You can garnish with some chopped scallions.
