Fried Prawns Kerala Style – Chemmeen Varuthathu

These prawns are simply divine. Just Melt in Your Mouth – Good.
Prawns cooked crisp yet succulent in a matter of minutes. Fried Prawns Kerala Style – Chemmeen Varuthathu  always provides the perfect side  to any main dish (That is if you can keep yourself from finishing them off before your meal!).

Ingredients:

  • 200 gms prawn cleaned and deveined
  • 1 tsp tumeric
  • ½ tsp feshly cracked pepper
  • rock salt to taste
  • 4 Tbsp Coconut oil
  • 1 tsp kashmir chilly powder
  • curry leaves
  • mustard seeds
  • For Garnish 1 large onion,  2-3 green/ red chillies, lemon wedges, 1 Tbsp Finely chopped coriander leaves





Method:

  • Heat  a small sauce pan.  Add the prawns, half the turmeric, half the cracked pepper, rock salt and just a couple of spoons water and cook the prawns turning once just till they turn white.  Do not over cook.  Set aside.
  • In another non stick frying pan, heat coconut oil and add mustard seeds.  Allow them to splutter.
  • Now add curry leaves, followed by the chilly powder and the remaining turmeric and pepper with a pinch of rock salt – just till it turns aromatic.  Do not burn the spices.
  • Lay the prawns flat in one layer and fry on one side just 30 seconds and then turn them all over for another 30 seconds.  Stir around till they are nicely crisped all around.  Just another 30 seconds should do.  Remove to serving dish.
  • In the same flavored oil add the sliced onion rings and chillies and toss to coat.  Do not over cook, they should remain crunchy.  Use as garnish, topped by fresh coriander leaves and a squeeze of lemon.
