Chicken Tikka Sandwich Baguette
This is my version of an easy Chicken Tikka Sandwich Baguette. Who can resist delicious Chicken Tikka? Well this is a simplified but delicious version made into a hearty sandwich. Crusty Italian Bread or Baguettes will be the preferred bread for this Sandwich. You need that hard crusty exterior to compliment the meaty textured filling. Soft breads will not do justice.
And do try my version of Smooth Coriander Chutney Dressing. Give it a go. Pretty straightforward, this one! My kids like to have the extra tikkas with the chutney.

Bbq Chicken Burger with Homemade Barbecue Sauce – is made absolutely from scratch. From the Patties – to the Sauce – to the Bun! Didn’t I do a good job with those burger buns ( Patting myself on my back 🙂 ).
A chicken burger patty with a smoky edge to it. If you really really love the barbecue flavor, you can make the home made barbecue sauce along with it. Or else, these patties are great with just ketchup and mayo. The key as with all burgers is to never over cook the patties. They should be watched and removed from the grill/ pan as soon as they are done. And these chicken patties cook pretty quickly.

Mushroom Melts Sandwich – these sandwiches are full-o-flavor! I just love mushrooms, don’t you? The umami that they lend to a wide array of dishes is irreplaceable. I enjoy all sorts of mushrooms, but my favorite has gotta be the swiss brown mushrooms! They are reliable in most of my recipes, with just the right amount of umami oomph, and not pushing anyones buttons. So, this sandwich is something I came up with for a breakfast sandwich and it was a total winner. As I always do, I quickly jotted the amounts of things I used, because you know me – my memory is awful! Another one for my recipe box. Keeper for sure. Egg Salad Sandwich – Easy Fixes
Nothing is as easy and satisfying as a nice fresh egg sandwich! Perfectly boiled eggs, creamy, yummy dressing and a little bit of this and a little bit of that. There are lots of varitions but honestly, when it comes to a classic egg salad – keeping it simple is the key! The egg is meant to be the star of the show here.
If making for kids lunch box, you might want to use bread that isn’t toasted and add and ice pack to the lunch box to keep it fresh.
Mu Shu Chicken & Chinese Pancakes
Mu Shu Meat dishes are one of the staples of American Chinese Cuisine. This Mu Shu Chicken recipe has chicken stir fried with mushroom, wood ear mushroom (black fungus), cabbage and carrot. You can also use lily buds and bamboo shoots in the stir fry. Traditionally, the stir fried meat and veg mixture is wrapped in the Simple Tortilla style, Chinese pancakes. However, you can also wrap in long lettuce leaves and serve as an appetizer.
This dish is extremely simple to prepare. Both the pancakes and the filling can be made in the same pan – less clean up. Mu Shu dishes gained popularity in the United States in the early 60’s and still remain a popular Chinese American take out item.
This is an absolutely delicious, melt in your mouth kind of kofta meatball curry. The meatballs can be made of minced mutton or beef. The flavors are subtle and mouth watering. I love to use grape cherry tomatoes for the gravy, blanched and peeled. I don’t know why but I think they give better results than larger tomatoes for this curry. They seem less acidic. The meatballs fall apart and melt in your mouth!! Yum! And the best thing is this curry is so easy to make. Great – served with Rice or Flatbreads. I love it with Chapathi.
