Pomegranate Molasses

Pomegranate Molasses or Pomegranate Syrup ( دبس رمان – Dibs Rumman, in Arabic) is  a very common ingredient in many Middle Eastern Recipes. If you don’t have some on hand, you might like this recipe. It is made with just 2 pomegranates so that you don’t have too much left over. If you would like to make a big batch, Simply Multiply all ingredients by 4.


Pomegranate Molasses  is used for marinades, salad dressings, sauces and in drinks to name a few examples. I use it in my Baba Ganoush Recipe.

Watercress and Avacado Dip

A Watercress and Avacado Dip that’s very quick and easy dip to serve with Pita Bread, Vegetable or Bread Sticks. Comes in handy when you want something fresh  and simple.

Watercress helps to increase the level of anti oxidants in the blood which may be why it is thought to have anti cancer benefits.

Strange fact : The name ‘Avacado’ comes from the Aztec word ‘Ahuakati’ which means – Testicle! The reference is thought to either be derived from the shape OR the fact that Avacado was considered to be an Aphrodisiac by the Aztecs. Following the aztec naming convention Guacamole would then mean something like Testicle Sauce!?!

The Avacado fruit  contains Vitamin B and C and has 60% more potassium than a Banana. 3/4 of the fruits carbs come from fat, but this is monounsaturated fat which helps reduce LDL (Low density lipoprotein /BAD cholesterol) and increase HDL (High density lipoprotein / GOOD cholesterol).

Tabbouleh / Tabouli is a Meditteranean salad, consisting of Cracked Wheat (Bulghur Wheat). The word Tabboulleh is derived from the arabic word ‘Tabil’  meaning ‘Seasoning’. Usually the bulghur wheat is tossed with finely chopped parsley, tomatoes, onions,  mint but cucumber and/or lettuce is often added to make a more attractive and crunchy salad. Often served as an important part of a ‘Mezze’, this dish is popular worldwide.

Bulghur is a whole wheat grain that has been cracked and partially cooked. Although most popular in Tabbouleh, it can also be cooked similar to  rice or couscous in other preparations.

According to Arab Folklore, the ratio of the Parsley to Bhurgul indicates the social standing of the family. The more parsley tot Burghul, the higher the economic status.

One day I had no idea what to make. I stared at the cucumbers and carrots for a long moment and then made this Asian Inspired Salad. Cut the broccoli into small florets.
Cut enough off the stem to be able to lay flat on plate.
Cut the base stem to make the base of the tree and slice so that one side is flat.
Do the same with a head of cauliflower florets as with the broccoli.
Bring water to boil. Add the Broccoli for 1 minute and drain.
Rinse with cold water.
Boil the cauliflower florets for 30 seconds as well. Drain and rinse.
Use cherry tomatoes to decorate and serve in an oval shaped platter as shown.
Drizzle with salad dressing, As desired.
Finally, place a slice of Star fruit for the star on top.

Fresh from my friend Mini’s garden. This Funny looking bean goes by many names : Winged Bean, Asparagus Pea, Goa bean, Kacang Botol, Four sided bean, Square Bean, Chathura Payar, Irachi Payar etc… Have you had it? 

It’s very crunchy and thus great in salads. I am making a fusion recipe of these crunchy beans paired with some Mandarin Orange Sautéed Prawn/Shrimp. Doesn’t that sound inviting?
