Mushroom Melts Sandwich – these sandwiches are full-o-flavor! I just love mushrooms, don’t you? The umami that they lend to a wide array of dishes is irreplaceable. I enjoy all sorts of mushrooms, but my favorite has gotta be the swiss brown mushrooms! They are reliable in most of my recipes, with just the right amount of umami oomph, and not pushing anyones buttons. So, this sandwich is something I came up with for a breakfast sandwich and it was a total winner. As I always do, I quickly jotted the amounts of things I used, because you know me – my memory is awful! Another one for my recipe box. Keeper for sure. This Frosted Fudgy Brownie Recipe is something I have depended for many many occasions. I thought it’s time I shared it with you all.
Brownies are said to have come into existence at the Palmer House Hotel, Chicaco in the late 1800’s. The wife of the Owner asked the chef to create a dessert for a socialite gathering. She requested for a dessert that was similar but smaller than a slice of cake and could be packed into a lunch box. By the early 1900’s the Brownie was a recognized dessert, typically eaten by hand and accompanied by a cup of milk or coffee.
There is something about these chocolate delights with their crinkled tops, that makes you want to reach for one, without a second thought. What’s your preference: Cakey, Fudgy or Chewy? Centre or Edge? Hot or cool? This recipe makes a delicious Fudgy Brownie using Dutch Processed Cocoa Powder and Shortening. I have found that they must be made in a light colored Aluminum Baking Pan for best results.
These brownies are fudgy, moist and just bordering on the cakey side. They have a certain melting quality that I love! Hope you will too.
Quick Chicken Tikka Fried Rice
This is a very quick Fried Rice, incorporating the yumminess of Chicken Tikka, which most kids are crazy for! The most important thing in preparing your kids lunch boxes, is planning! Make a plan for what you are going to make the next morning. This goes a long way in helping, no matter how sleep deprived or hazy you may be feeling.
For dishes like Fried Rice, always have some cold cooked rice in the fridge. I have a small baby sized pot with a lid that I use to cook rice in. When it cools down, I just stick it in the fridge. This way I can always make fried rice for my kids any time. Day-old cold rice is always best for fried rice anyway!
And when ever you are making a chicken dish for lunch or dinner, I recommend removing and setting aside a very small amount (like a quarter cup) of boneless meat. Marinate and chill this portion overnight, like I have done.
This way the next day I can send the kids off with this Chicken Tikka Fried Rice, which they always love!

Turmeric is also mentioned as a helping medicine to cure / prevent Cancer, Alzheimers, Depression and Arthritis as well as other Age related chronic diseases.
