This Frosted Fudgy Brownie Recipe is something I have depended for many many occasions. I thought it’s time I shared it with you all.

Brownies are said to have come into existence at the Palmer House Hotel, Chicaco in the late 1800’s. The wife of the Owner asked the chef to create a dessert for a socialite gathering. She requested for a dessert that was similar but smaller than a slice of cake and could be packed into a lunch box. By the early 1900’s the Brownie was a recognized dessert, typically eaten by hand and accompanied by a cup of milk or coffee.

There is something about these chocolate delights with their crinkled tops, that makes you want to reach for one, without a second thought. What’s your preference: Cakey, Fudgy or Chewy? Centre or Edge? Hot or cool? This recipe makes a delicious Fudgy Brownie using Dutch Processed Cocoa Powder and Shortening. I have found that they must be made in a light colored Aluminum Baking Pan for best results.

These brownies are fudgy, moist and just bordering on the cakey side. They have a certain melting quality that I love! Hope you will too.

Gingerbread man is a biscuit made of gingerbread, usually in the shape of a man although ginger bread women are common too, as are cookies shaped according to seasonal themes (Christmas, Halloween, Easter, etc).

GingerBread dates back to the 15th century and human shaped ginger bread biscuits dates back to the 16th century.

According to the fairytale of ‘ The Gingerbread Man’ a childless old woman bakes a gingerbread man who magically comes to life  leaps from her oven and runs away. The woman and her husband try to catch him but fail. In the story the ginger bread man continues to run and escape from various pursuers. The lines ‘ You can’t catch me. I’m the Gingerbread Man ‘ are famous in the story.

I love making these biscuits for holidays with the kids. They are fine left as they are or for a more festive feel, decorated with royal icing, candy etc.

My pantry was not looking so great but hmm, yes I got marshmallows, graham crackers and no chocolate but yes Nutella!! Nutella S’mores – mmhmm! I showed the girls how to make them and now they can make them for themselves. I help them putting them in the oven  and its done in less than 15 minutes.

Nunu and Zaira are in the kitchen again. This time making a favorite from my childhood. Rice Crispy Treats! Kids love them. I remember we had a bake sale at school once, and this is what I bought along. They were the first thing to be sold out. Perhaps it’s the small size of the squares packed with sweetness and a chewy crunch, that makes them a nice quick, sweet treat!

These can be made and stored in airtight jars for 5-6 days. The remain chewy and crisp.  You can add some mini chocolate chips to the mixture if you like too.

This  Moist Chocolate Cake with Chocolate Whipped Cream!  It’s the cake I made for my Husbands Birthday, for my kids back to school surprise, my daughter birthday and for friends as Gifts. Yupp! I make it regularly because it’s a big hit with everyone. There’s some waiting involved: Making the whipped cream the day before for best results, waiting for the cake to cool, waiting for the crumb coat to set and then waiting for the final setting for 1-2 hours. But the putting together is quite simple. It helps immensely if you live in a cooler climate to make the whipped cream. If your surroundings are more humid, you can whip the cream in a bowl of ice and keep the cream chilled. Also frost the cake in an air conditioned room if possible to make your job easier. Whip cream can also be stabilized so that it lasts longer out of the fridge. I will post on that another day.

I have played around with this recipe for a while now, sometimes making it with wheat flour for a healthier version. Many hours have gone into perfecting this recipe. Hope you will enjoy it. It’s my Daughter Zaira’s favorite. 🙂
