Slata Mechouia | Tunisian Grilled Pepper Salad is one of the most popular and traditional foods served in Tunisia. If you love dips and are always looking for something different, this is excellent. The combination of peppers, once grilled gives a unique and delicious flavor as well as enticing aroma. Slata Mechouia, pronounced ( S-lata Meshweeya) means ‘Grilled Salad’ in Arabic, but it is more of a grilled salsa than a salad.
Serve with traditional Arabic, or North African breads or toasted pita. According to the variety of peppers used, it can range from mild to spicy, however, the milder ones are more common and preferred. It is customary to top the salad with flaked tuna, olives and boiled egg.. I was skeptical at the addition of tuna but it actually works with the spicy, grilled sweetness of the peppers. Serve with traditional Arabic, or North African breads or toasted pita.

Spicy Grilled Baby Corn
My daughter often wanders into the kitchen, proclaiming she is hungry and that I must fix her something yummy to eat. Three meals a day is hard enough, it’s not possible to give the kids cooked, tasty snacks everyday.. usually our tea time, is biscuits and Milo for the kids. Naureen helped herself to the baby corn I was using for a salad. “Hmm, this is nice – maybe we could make something spicy with these and some lemon!”, she giggled. She didn’t think I would let her take the ingredients, I had intended for our salad. I thought it was actually a pretty good idea , so we ended up making these Quick, Tangy, Spicy Grilled Baby Corn Skewers!
I also skipped the ‘grilling’ part and simply seasoned some of the corn… kids liked that too!
Thai Grilled Chicken and Arugula Salad
Goodbye to boring old salads … This Thai Grilled Chicken and Arugula Salad is pleasingly delicious with various layers of flavor! A complete meal. We all love incorporating more salads into our meals. It’s no secret that while food is meant to be enjoyed, you have to keep it well balanced with the occasional indulgence. After all, what’s life without the ability to indulge in things you love – once in a while! With regular salads like these you can be happy and content at the same time PLUS you will be able to indulge more often in those guilty pleasures.
So we have chicken and we have arugula, in this delicious duet of a salad. The chicken is first cooked in a fresh aromatic and herby paste. A little coconut milk is added to keep the chicken breasts succulent. The chicken is then grilled , while reserving the gorgeous, exotic sauce in which it was cooked. This forms one of our two dressings. The other, is made from half the arugula into a dressing with a kick from some added horseradish sauce and mayyonaise. The fresh ingredients are simply tossed in olive oil, lime juice and salt. The grilled chicken is cut up and tossed in just before serving and the duo of chilled dressings is dolloped over the top. Sprinkle some sunflower seeds and your easy peasy delicious salad is ready!

The ‘hot’ and ‘cold’ combination of hot grilled chicken with cold delicious potato salad has won everyone over around here. We are all looking for those quick and easy meal plans, aren’t we? Those that are hassle free yet tasty! This fits the bill and is great to pack for a picnic as well.
Chicken tenders / tenderloins are the slender strips of additional meat hanging from the bottom-side of chicken breasts. There would thus be two tenders per bird. They are often sold separately from chicken breasts at the supermarket, often coming in thermo-packs of 5-6 strips. Sometimes labeled as chicken fillet. These cuts of chicken are quite cheap and can be used for frying (chicken strips) or cut up in stir fries or grilled as I have done. Cooked properly they remain moist and tender. This is my favorite quick recipe using chicken tenders.

If you like, Sticky BBQ WINGS, these Oven Barbecued Chicken Wings , are just perfect. The fall off the bone quality of these wings aims to please. I use my Homemade BBQ Sauce to make these yummy wings. All that you have to do once, you’ve made the simple bbq sauce – is to marinate the wings with this and a dash of salt, pepper, paprika and olive oil. Bake in a conventional oven and enjoy. This is a great way to use up you BBQ sauce as well.

Mushroom Melts Sandwich – these sandwiches are full-o-flavor! I just love mushrooms, don’t you? The umami that they lend to a wide array of dishes is irreplaceable. I enjoy all sorts of mushrooms, but my favorite has gotta be the swiss brown mushrooms! They are reliable in most of my recipes, with just the right amount of umami oomph, and not pushing anyones buttons. So, this sandwich is something I came up with for a breakfast sandwich and it was a total winner. These deliciously simple Seekh Kababs are perfect for dinner or tea parties. I like to pack them the next day for Kids Lunch Boxes as well. These Seekh Kababs contain no chili powder, pepper or coriander powder. Mildly spiced and very moist and flavorful! We love them!
Seekh is the Turkish word for the Thick Metal Skewers which are used to shape these kababs. They are fun to make and even more fun to eat! Served with a simple white sauce.
