Moroccan Baked Salmon – to spice it up !
If you like a spicy baked Salmon, you will love this one. Salmon is a regular item in our house. Twice a week at least, I will prepare salmon. And you know I love variety… There are so many ways to make salmon delicious. This is my new favorite. It’s quick and easy. Spiced and jazzed up with the flavors of Morocco. You might find it to be your new favorite too 😉
Of all the different fish varieties, salmon is held a step above when it comes to nutritional value. Salmon is also considered to be a ‘brain food’. An excellent source of quality protein, vitamins and minerals (including potassium, selenium and vitamin B12) but they are of course known for the content of omega-3 fatty acids.
Chicken Lasagne – Care to Indulge?
Lasagne or Lasagna? The famous Italian dish of meat sauce and layered sheets of pasta, is loved by people all over the word. However, did you know, that you may be referring to it wrongly? My friends in the Middle East , India , and even in South East Asia, we often refer to the dish as ‘ Lasagna ‘.
However, this is actually incorrect because , Lasagna is the singular form and refers to a sheet of the pasta. ‘ Lasagne ‘ refers to the dish which uses multiple sheets of pasta. Truth is though, that the word Lasagna is used much more, but as a devoted foodie, it is my duty to let my readers know of the difference.
Chicken Lasagne is popular with those who do not eat beef, which is more commonly used. I received many requests to post a chicken-pasta dish. So here is my version of Chicken Lasagne, and I assure you it is extremely delicious and everyone will be impressed if you make it for them. Quite indulgent, with butter, cream and cheese. Not the every day meal, that’s for sure. Creamy, warm and simply Yummy. Yay! Let’s go. Check out the video below.
This Chicken Chops Baked Rice with Cheese is extremely easy to make. Kids love it because of the delicious melted cheese on top, and adults have a hard time resisting it as well. All the delicious, hot ooozy, goodness is revealed when you first cut into that baked melted crust. It’s hot – be careful, although I know it’s kinda hard to wait patiently 🙂 This is my take on the popular Hong Kong Dish which is basically Chicken Chops served over fried rice and baked with marinara sauce and cheese scattered over the top. I prefer a simple and fragrant rice as the base, fried rice seems a bit too heavy with the marinara sauce and cheese. Must be served immediately from the oven, while the cheese is still melted and oozy. Enjoy!
Fiery Chicken and Mushroom Pizza
Kick it up a notch, with this Fiery Chicken and Mushroom Pizza! Quite different in the making, the chicken remains so moist on this pizza and the earthy notes of White button mushrooms and Vidalia onions come together exquisitely! Red pepper flakes nestled deliciously over the melted hot cheese, makes it quite tempting, if you like it hot! I like to add lots more of the ‘red stuff’ after baking too. The girls have actually stopped picking off the mushroom since, I started making this Pizza. Using freshly grated Mozzarella makes a big difference btw.
Baked Chicken with Kale and Béchamel Sauce
This Baked Chicken with Kale and Béchamel Sauce is a meal by itself. The chicken is marinated overnight, breaded and baked prior to topping with Delicious Kale and Béchamel Sauce. Baked again to get the kale crisp and the sauce golden. The chicken is so tender and the pairing of the earthy Kale with the Oozy, Melty Béchamel works so perfectly. Serve freshly baked and hot with a nice cold salad! Yummy!
Oven Barbecued Chicken Wings
If you like, Sticky BBQ WINGS, these Oven Barbecued Chicken Wings , are just perfect. The fall off the bone quality of these wings aims to please. I use my Homemade BBQ Sauce to make these yummy wings. All that you have to do once, you’ve made the simple bbq sauce – is to marinate the wings with this and a dash of salt, pepper, paprika and olive oil. Bake in a conventional oven and enjoy. This is a great way to use up you BBQ sauce as well.

Baked Fish and Chips – Healthier Choice
There are a few versions of Fish and Chips, that I absolutely adore. My Crumbed fish and chips for example, which my kids love. It is darker and more seasoned with a special jalapeño sauce marinade. This baked version however, is made more simplified. Seasoned very lightly, and baked so that it’s healthier. And it’s still so yummy! I make this when I am pressed for time. If making home made fries, make sure to soak the cut fries in water before baking. I love using my new crinkle cutter!
